Nagano sake is made from high-quality sake-rice grown with the clear spring water that flows from one of the highest mountains in Japan and a climate with temperatures that varies between day and night.

We will provide sake carefully selected amongst 80 sake breweries in Nagano by our staff, who qualified as a sake sommelier(Kikisake-shi) and has been selling sake for over 15 years.

History of the brewery

Shigaizumi was founded in 1960 in Nakano City, Nagano Prefecture.
It was first established as a joint venture by several breweries. The young master brewer's goal of "sake loved by everyone" has steadily evolved over the years, and the gentle taste of the sake is loved by many customers.

Characteristics of the brewery

We use fresh water from Ryukoji Temple in Kijimadaira Village, Nagano Prefecture, which has been selected as one of the 100 best waters in Japan. The water has a great influence on the taste of the sake, and by using this water, we are able to produce a very gentle taste that never gets old.

Junmai Ginjo Itteki Niteki

 

This junmai ginjo is made from Kijimadaira's Yamadanishiki, which is rated triple-A in the Japanese Rice Evaluation Contest. It has a gorgeous aroma and a fresh, fresh taste, making it a very popular junmai ginjo. It can be served cold or lukewarm.

Sou Sou Tokubetsu Junmai

This sake is made from Sankeinishiki, a newly developed rice for sake brewing in Nagano Prefecture. Although the acidity is set high, the delicate and complex taste is just like music.

The taste of sake changes depending on the temperature range, and this is one sake in particular where you should find your favorite temperature range. We recommend a lukewarm temperature of about 40 degrees Celsius.

History of the brewery

Marusei Brewery was founded in 1881 in Nakano City, Nagano Prefecture.
The founder, Shinshichiro Seki, began making sake with the wish that the world would become round. The brewery is dedicated to using traditional methods.

Characteristics of the brewery

One of the features of this brewery is the use of glutinous rice in sake making. This accentuates the taste of the sake and makes it more pleasant to drink.

Mochigome Yondanzikomi

 

It is a sweet sake with a sake meter of -11, but it has a strong acidity and the initial impact is dry and refreshing.
In the aftertaste, the gentle taste of glutinous rice lingers on the tongue, and it is a Junmai Ginjo sake with a pleasant lingering taste.

It can be drunk cold, but when served at room temperature or lukewarmly heated (20°C to 40°C), the flavor and aroma harmonize to create a very rich taste.
This is a Junmai Daiginjo sake that should be enjoyed at a variety of temperatures.

History of the brewery

Since its establishment in the late Edo period, more than 170 years have passed since then. While strictly adhering to traditional techniques, we also effectively introduce new technologies and strive to produce quality sake with all our heart.

Characteristics of the brewery

One of the features of this brewery is that it uses Kokuyounomizu, the softest water in Japan. It has been said that ultra-soft water is unsuitable for sake, but after years of sake brewing and research, we have been able to create a delicious sake that is soft and brings out the best in the ingredients.

The company has also made efforts to cultivate its own yeast, and has become one of Nagano's leading breweries in both name and reality.

Takizawa Junmai Ginjou Kuro

 

By using Kokuyou water, the flavor of the Miyamanishiki rice itself is brought out, while the aftertaste is clean and refreshing.

It is a Junmai Ginjo sake that brings out the best of the ingredients, and is neither plain nor rich.

Shinano no Umeshu is a full-bodied plum wine with a refreshing acidity and sweet aftertaste due to the sake brewing process.

It is best served chilled with ice to enhance the aroma and create a harmonious and well-balanced plum wine.

History of the brewery

Established in 1873. Our first priority is to adhere to the basics and stick to handmade products.
Making sake by making the most of the blessings of the local nature it has many fans all over Japan.

Characteristics of the brewery

It is characterized by its sharp, transparent quality of sake and its profound taste. The water comes from Mt.Mizuo in Nozawa Onsen village. For rice, contract-grown rice from Iiyama and Kijimadaira villages is used. The maker lives close to the brewery. The strength of the brewery is its coexistence within the region.

Simple pure rice wine finished dry.
Made from No.7 yeast, which originated in Nagano Prefecture, it smells just right.
It is a good match with various Japanese dishes.

Takayashiro Farm & Winery

History of the brewery

Takayashiro Winery was established in 2003 in Nakano City, Nagano Prefecture.
Four local grape farmers have come together to create a wine that is loved by the locals through a process of trial and error.

The winery not only grows grapes, but also focuses on regional revitalization by developing its business from processing to sales as an agribusiness.

Characteristics of the brewery

Although it is a young brewery, it grows a wide variety of grapes, including Chardonnay, Kerner, Riesling, and Sauvignon Blanc for whites, and Merlot, Cabernet Sauvignon, and Zweigelt L?be for reds. The Yamabudou is one of the most popular and easy to drink wines.

Yamabudou is rough, complex, and mellow, but it is also very fragrant and easy to drink.

It has a well-balanced flavor with a good aroma at around 20 degrees Celsius.
